Make These Coconut Macaroon Nests For Easter

Get in the holiday spirit with this adorable and delicious coconut macaroon nest, that are shaped like a bird nest with candy eggs in the middle. Whip up this easy coconut macaroon nest recipe and enjoy the Easter holiday season with something sweet.

Ingredients

  • Mini Paper Cupcake Liners or Cooking Spray
  • 1 Tablespoon of Sugar
  • 70 to 90 Mini Candy Eggs
  • 4 Egg Whites
  • ½ Cup of White Chocolate Chips Melted
  • ½ Teaspoon of Salt
  • 1 Package (14 ounces) of Sweetened Flaked Coconut
  • Piping Bag
  • Mini Muffin Pan

Instructions

Step 1:

Preheat oven to 300 degrees Fahrenheit.

Step 2:

Spray the mini muffin pan with cooking spray or fill the mini muffin pan with mini paper cupcake liners.

Step 3:

Combine sugar, salt, and egg whites in a large bowl and whisk lightly, and then mix the coconut into the mixture with a fork.

Step 4:

Take the mixture and spoon it into the mini muffin pan, using your thumb or a wine cork lightly press it into the bottom and up the sides.

Step 5:

Place the pan in the oven and bake for 28 to 30 minutes or until the cups are lightly golden.

Step 6:

Remove the cups from the oven and for 10 minutes let them cool on a wire rack.

Step 7:

Run a toothpick, spoon, or spatula around the edge of the cups to help loosen the nest. Then carefully remove them from the mini muffin pan, and allow them to cool completely.

Step 8:

Take the melted chocolate and place it in a piping bag and put a small amount into each nest, this will act as a “glue” to hold the eggs in place. Then place two to three candy eggs in the nest, and gently press them to secure them in place.
