Ingredients
- Minced Chives
- 1/4 Cup of Lemon Juice
- 2 Medium Lemons, Halved
- 4 Tablespoons of Olive Oil
- 1 1/2 Teaspoons of Crushed Red Pepper Flakes
- 1 1/2 Pounds of Boneless Skinless Chicken Breasts (Cut into 1-inch cubes)
- 1 Teaspoon of Minced Fresh Rosemary (Or 1/4 Teaspoon of Dried Rosemary, Crushed)
- 6 Skewers
Instructions
Step 1: In a large dish, which together rosemary, lemon juice, pepper flakes, three tablespoons of oil, and wine. Combine with cubed chicken and let marinate in the refrigerator for 3 hours.
Step 2: Heat grill to over medium heat.
Step 3: Remove the marinated chicken from the bowl and discard the marinade.
Step 4: Thread six to seven pieces of marinated check onto the skewers. NOTE: If you’re using wooden skewers, make sure they soak for at least 20 minutes so they don’t burn on the grill.
Step 5: Place the chicken kabobs on the grill, cover, and cook for 10 to 12 minutes or until no longer pink. NOTE: Turn the chicken once around the six-minute mark.
Step 6: While the chicken cooks, place the halved lemons on the grill and cook for eight to 10 minutes or until lightly browned. Then squeeze the lemon juice, drizzle one tablespoon of olive oil, and sprinkle chives over the chicken kabobs.
